Our roastery – the heartbeat of what we do

​

Coffee is our passion. We are dedicated to roasting only the highest quality coffees so that all our customers can enjoy the finest flavours – every cup is a truly memorable experience. Our state-of-the-art roastery incorporates the very latest automation, guaranteeing consistency in every batch and providing peace of mind to our growing client base.

Our mantra is SOURCE | ROAST | BREW | REPEAT. Our coffee beans come from farmers who use ecologically and socially sustainable practices, helping to support a healthy ecosystem and to provide a fair living for their workers. These are the only farms that can produce the high quality coffee we use. The care that goes into growing, shipping and finally roasting these coffees is reflected in the flavor of the finished product, which is why we are so precious about every stage of the coffee bean journey. To make sure that every coffee is exactly as our customers expect, we 'cup' every coffee we roast, the day after its roasted and every single coffee is traceable back to to the farm.

RAW MATERIALS Good coffee begins with the cultivation. In order to get the best beans, we purchase the right types and qualities for our various segments directly from the coffee-markets: in New York for Arabica and in London for Robusta types. We purchase the raw materials for our premium products from specific merchants – people we have known for many years and who are known for their access to goods of a particularly high quality and pure varieties.

PROCESSING Aroma is a flighty creature. It only unfolds fully when it is treated gently. Our decades of experience shows: it makes a huge difference whether coffee beans are roasted at 500°C for three minutes or gently at 220°C for 17-20 minutes. The difference may not appear to be that big at first, but the flavour speaks for itself: due to the slow drum roasting without additives such as water and flavourings, we create a coffee with fewer bitter substances that is roasted to the core. The coffee is then cleaned again and left to rest in aroma silos for one to three days. This is the one thing we have learned over the years: only patience helps to unfold the full strength of the coffee.

MEDIUM ROASTS

​

You're bound to have seen the phrase 'medium roast' on packs of coffee, but what does it really mean? When you're buying specialty coffee, the roast has a real impact on flavour, and here's how to know what you're buying.

 

Coffee beans that are fresh off the tree are naturally green and only become the distinctive brown ovals you know after careful processing and roasting. Roasting not only dries out the coffee beans, it draws out their natural flavours, with a roasted, toasted flavour added as you move from light to medium and dark. Which roast level you prefer is personal choice, but we'd advise you to experiment with light medium and dark to find your favourite.

 

If you like your roasts light, you want to taste the coffee as close to its natural form as possible. If you prefer a dark roast, you probably like the earthy, smoky flavour the roasting process adds. A dark roast  can be quite intense, so if in doubt, a medium is always a good bet. Some coffee connoisseurs believe that a medium roast coffee is the best of both worlds, retaining the natural taste of the bean enhanced with a subtle roasted flavour.

 

Coffee roasters like us know the best roast for each variety, and treat every crop with care to make sure it tastes its very best.  We use state of the art automation in the roast to ensure consistent quality specialty coffee that tastes just as the grower intended every single time. And if you like your roasts medium, we'll find the perfect balance for you.

 

Can I tell if it's medium roast by looking at the beans?

You can. Generally a medium roast coffee bean is a darker brown than a light roast, though of course, you can probably only tell this looking at them side by side. But there is another way to tell a medium roast from a light roast by looking, and that's by looking for a coating of oil on the surface.

 

Light roasts will have a dry appearance whereas medium dark roasts will appear oily, as many of the oils have been drawn out in the roasting process. Dark roast beans will look even shinier still. If you like your roast medium and can see the beans you're buying, this is a  great way to judge a roasted coffee by eye.

 

Can I tell if its medium roast coffee from the taste? 

Absolutely. Medium roasts tend to be sweeter than a light roast, with balanced acidity and more body. Coffee that has been medium roasted also start to take on some of the flavours of the roast, where lighter roasts retain more of their bright, natural flavour. Not all medium roast coffees taste the same. Roasted beans taste different depending on the roast but there's so much more at play, like variety, country of origin, climate and how the beans are treated after they're picked. A dark roast will always be smokier, but even darker roasts will have their own unique qualities depending on the beans they're made from. The coffee roast process can do a lot to enhance the natural flavour of the coffee but the flavour notes, brightness and texture are mainly down to the great quality coffee that goes into the coffee roasting machine.

Giving back to farmers and their families

We're committed to supporting our growers to develop their businesses and improve their quality of lives, and go beyond just fair trade. We give back on both our single origin and coffee blends with initiatives like Project Waterfall. On a selection of our coffee, we give 10 per cent of profits to Project Waterfall - an initiative to provide clean water to coffee growing communities, so every coffee blend contributes to better lives for the people who put their heart and soul into the coffee we source, roast and sell.

Even when beans are blended, and whether we use two or five coffees to create a blend, we can always trace every crop right back to where it was grown. As an experienced roaster, we know how to treat all our coffee beans to retain and enhance their natural flavour, so you can be sure that every cup you serve up tastes great, every single time.

Colombian coffee

Colombia is one of the most famous coffee producing countries in the world, but however much Colombian coffee you've enjoyed, there's still so much more to explore. The Colombian single origin coffee beans in our Single Origin 2 comes from the Tacueyo reserve -  the largest coffee growing association in Cencoic. The association is made up of more than 540 coffee growing families with generations of farming experience, with a new warehouse and drying facilities for their coffee crops to ensure the great quality of their coffee is consistent all year round. With chocolate, blackcurrant and syrup tastes, this rich, smooth coffee is simply roasted to let its natural great taste shine through, however you're brewing it. It's particularly delicious as an after dinner espresso paired with a rich and decadent chocolatey pudding.

 

Brazilian coffee

Brazil is another giant of the coffee producing world and for good reason - its crops come from farms and estate plantations run by long lines of coffee farmers spread across the country's varied geography, producing so much great quality coffee. The Brazilian coffee in our Single Origin 1 comes from the municipality of Tres Pontas  in Sul de Minas - an undulating area between the Atlantica Forest and the Cerrado Biome that's home to more than 50 million coffee trees. The farm is run by the Chaves de Brito family, who've been faming coffee in this region for three generations, and lead by Carmen Lucia, head of the Brazil Speciality Coffee Association. Rich and indulgent with cherry, caramel and coffee flavours, this single origin coffee is some of the very best Brazil has to offer.

 

Papua New Guinea coffee

Our Single Origin 3 Papua New Guinea coffee is made using the best of the Blue Mountain and Arusha harvest – quality crops enhanced by extremely fertile soils and high altitude growing conditions up to 2,000m above sea level. All these factors combine to create a truly unique and characteristic coffee, unlike anything you’ll have tasted before. These factors combine to make a truly unique and distinctive brew, bursting with naturally sweet raspberry and milk chocolate notes, bright acidity and winey fruitiness.

 

Ugandan coffee

The Bukonzo Dream coffee in our Single Origin 4 coffee is hand-selected from the crops of 398 coffee farmers at the Kasinga Coffee Station, where processing is key to the coffee's finished flavour. The farmers pick the ripest cherries by hand before submerging them in water. The fruit that floats is removed, leaving only the finest coffee behind. These are then sun-dried on raised beds for a speciality coffee that’s bursting with apricot, peach and dark chocolate flavour.

ORGANIC CERTIFICATION

For many years our company has obtained organic certification. We offer our customers Arabica and Robusta coffee from certified plantations that do not use chemical or synthetic fertilizers, respect the environment and contribute to respecting the flora and fauna and improving the living and working conditions of farmers.

RAINFOREST ALLIACE CERTIFICATION

Rainforest Alliance 2020 stands for sustainable agriculture and better opportunities for farmers, their families and our planet.
Indeed, it aims to make a more sustainable world grow, protect nature and improve the lives of farmers and communities.
It teaches farmers the adoption of good processing practices, sets rules that lead to an improvement in working conditions, children's education and environmental protection. Farmers grow better products, generate more income and create better opportunities by safeguarding the environment and protecting the earth's natural resources.

HALAL CERTIFICATION

Our roasting and all our processes are Halal certified.
Halal certification has the purpose of guaranteeing, among final consumers, the lawfulness in the composition and production of the doctrine of Islam, or that the products of the agri-food supply chains comply with the ethical and sanitary standards, compliant with the law and the doctrine of Islam and salable in all Islamic countries.

We know the value of our coffee. And we want our business partners to receive it anywhere in the world with all the characteristics of freshness and quality that characterize it.

For this reason, for over 20 years, a dedicated office deals exclusively with assisting wholesalers and retailers all over the world.

Each customer is therefore supported in all phases of the supply:

  • We monitor deliveries and make sure that everything is successful.

  • We collect the feedback needed to provide an always better service at the best cost.

  • We also ship small quantities to meet all sales and storage needs.

To do this we decided to collaborate only with commercial partners who can guarantee excellent coffee storage conditions during transport and storage, as well as fast and timely deliveries.
